Caramelized Plum Tart


This bakery-quality tart is easy to make and absolutely delicious.  It features golden puff pastry topped with sliced plums and slivered almonds, baked until the pastry is golden and served with vanilla ice cream.

  • 1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed

  • 1/2 cup slivered almonds, finely ground

  • 1/4 cup sugar

  • 3 medium plums, pitted and cut into thin slices

  • 2 cups vanilla ice cream


  1. Heat the oven to 400°F.  Unfold the pastry on a baking sheet.

  2. Sprinkle the pastry sheet with the almonds and 2 tablespoons sugar to within 1/4-inch of the edge.  Arrange the plum slices on the pastry sheet, overlapping slightly, if needed.  Sprinkle the plums with the remaining sugar.

  3. Bake for 20 minutes or until the crust is golden brown.  Top each serving with 1/2 cup ice cream, if desired.

The kind of pan you use can affect baking times. A nonstick or dark glazed baking sheet may bake faster, so adjust your time and check pastry while baking.

If your Puff Pastry becomes soft and sticky while working with it, chill it in the fridge for a few minutes. Place in the refrigerator between rollings, too.

Always flip and place the cut side of the Puff Pastry down on the baking sheet.

You can thaw Puff Pastry in the fridge. Separate and place each sheet on a plate, cover with plastic wrap and defrost in the refrigerator for about 4 hours.

"Just brought this to a party and my family kept remarking about how gorgeous the tart looked and asked where I had bought it! It took no time at all to make, only requires a few ingredients and held up really well traveling. Especially delicious now, in August, since the plums are so juicy and delicious! "I just made this and it was delicious! I didn't use the almonds and I used 2 tablespoons of brown sugar instead of 1/4 cup of white, to cut down on calories. I sprinkled it with cinnamon and nutmeg and brushed a cherry jam wash over the crust after it came out of the oven. Very yummy and easy!"
