Recipe

Ingredients

  • 1 egg
  • 1 tablespoon water
  • 1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed
  • 1/3 cup Ocean Spray® whole berry cranberry sauce
  • 1/4 cup chopped toasted pecans
  • 1 teaspoon chopped fresh thyme leaves or rosemary
  • 16 ounces (1 round) Brie cheese

Directions

  1. Heat the oven to 400°F. Line a baking sheet with parchment paper. Beat the egg and water in a small bowl with a fork.

  2. Sprinkle the flour on the work surface.  Unfold the Pepperidge Farm® Puff Pastry sheet on the work surface. Roll the Pepperidge Farm® Puff Pastry sheet into a 14-inch square. Cut off the corners to make a circle. Save the pieces of the puff pastry to decorate the top of the brie.

  3. Spoon the cranberry sauce in the center of the circle. Top the cranberry sauce with pecans and thyme. Place the brie cheese on top of the cranberry sauce, pecans and thyme. Brush the edge of the circle with the egg mixture. Fold the pastry up over the cheese to cover. Trim the excess pastry and press to seal. Brush the seam with the egg mixture. Place seam-side down onto the prepared baking sheet. Decorate the top with the excess pastry. Brush with the egg mixture.

  4. Bake for 25 minutes or until the pastry is golden brown. Let stand for 20-25 minutes. Serve with the Pepperidge Farm® Crackers, bread and fruit.

  5. Flavor Variation: Other jams, herbs and nuts can be used.

  6. How to Thaw? Thaw time may vary.  Pepperidge Farm® Puff Pastry should unfold easily but still be cold after thawing.  At room temperature, thaw unwrapped pastry for no more than 40 minutes.  In the microwave, wrap pastry in paper towel and microwave on HIGH for 15 seconds, then turn it over and microwave for another 15 seconds.  If it doesn’t unfold easily, microwave for another 5 seconds on each side.

  7. This recipe can be assembled in advance and refrigerated prior to baking.

  8. Wrapped brie can be decorated with excess puff pastry by making free form shapes or using cookie cutters. Once baked, the brie can also be topped with fresh herbs.
